A labor-intensive cheese that’s hand-rubbed with a blend of Colorado Legacy Coffee (Roasted by the Cheesemakers brother) and French lavender buds. The rub imparts a nutty, exotic and bold flavor (stronger near the rind) that’s tempered by a buttery sweetness in the cheese. It’s the café-breve of cheeses. Straightforward yet complex. Aged on Utah Blue Spruce racks to create its unique personality. From the land of Salt and Honey. We couldn’t resist this one. Our SeaHive is hand rubbed with Beehive wildflower honey and local Redmond RealSalt. The honey is harvested from a local farm where the bee’s visit wildflowers and fruit orchards. The salt is from an ancient sea bed near Redmond, Utah and contains unique flecks of color that are the result of more than 50 natural trace minerals. This cheese is shaping up to be one of our best experiments yet and is a true expression of our local flavors. Promontory rubbed with Cajun (6 oz cut). Price $8.00 An Irish style cheese made with whole Jersey cow’s milk: buttery, full-bodied and lively with snappy, citrus-like and fruity notes. Warms on your tongue and leaves a subtle sharp note in your mouth. The Cajun rub was developed by local chef John Dearmin using only the finest ingredients, and unlike a typical Cajun rub, he uses cayenne pepper instead of paprika. The spiciness of the rub is a nice compliment to the creamy texture of the cheese. 2nd Place, Cheese Flavored with Pepper. American Cheese Society Annual Competition 2008 in Chicago, IL. Price $8.00  This aged Irish style cheese is made with whole Jersey cow’s milk from local Wadeland South Dairy: buttery, full-bodied and lively with snappy, citrus-like and fruity notes. Warms on your tongue and leaves a subtle sharp note in your mouth. We age this cheese a minimum of 8 months to develop flavor and each batch goes through an intense tasting before it is released for sale. 1st Place, Aged Cheddar @ the Idaho Milk Producers Association annual cheese competition in Sun Valley, ID 2008 and 2009. This competition encompasses cheese producers from 6 Western states. Promontory smoked with English Walnut Shells and Apples (6 oz cut). Price $8.00 We take our award winning Promontory and cold smoke it with the shells from an English walnut tree, just up the street on Combe Road, and add a few slices of sweet Utah red apples. As the cheese ages, the spicy heat permeates the cheese. This cheese is a favorite with those who like a little spice in their life. Promontory with Rosemary (7 oz cut). Price $8.00  Our Promontory with dried rosemary mixed in. The cheese is herby and fragrant and a must try for rosemary lovers. Promontory with Caraway (7 oz cut). Price $8.00 Our Promontory with caraway seeds mixed in. A twing of Holland. Full Moon (7 oz cut). Price $8.00  One of our more earthy cheeses— our very first batch was made under a full moon. Un-pasteurized and gently heat-treated. Super buttery, natural and slightly sharp with a satisfying after taste. Made in small batches that vary by season and climate. Some batches taste like Utah’s sun-drenched summers and others hint of cooler months. Emigrant (6 oz cut). Price $8.00  Named after the Pioneers that settled our state, this aged cheese is a Beehive Cheese Co. original. Think of a creamy, full flavored aged cheese combined with a pineapple nose. This cheese was the result of not stirring enough moisture out of our Aggiano recipe. Ponder the idea of mixing concrete by hand for 2 1/2 hours. We put the cheese away for a few months and loved it. We bring it to you as our first mistake cheese that turned out. ENJOY! Uintah Jack (7 oz cut). Price $8.00  Named after the town where we make cheese. This Jack is not like the grocery store variety because we age the cheese for 1 year minimum. Full flavored and out of this world with Mexican dishes like cheese enchilada’s, quesadilla’s and great shredded over stuffed green chilis. Squeaky Bee Curds - Plain (8 ounces). Price $5.50  Yes, everyone loves our "Squeaky Bee" cheese curds. We take pride in coming up with just the right combination of fresh local ingredients to project a lovely, yet subtle A# (that's a sharp to music lovers) with every squeaky bite. If your curds don't squeak (D flats don't count) they are not Beehive Curds. Squeaky Bee Curd is a cheese the whole family will enjoy. Squeaky Bee Curds - Habanero (8 ounces). Beehive RUSKS are loaded with whole grains, seeds, nuts, herbs and Utah’s Own wildflower honey, REAL® sea salt and dried cherries. Our RUSKS were inspired by an original work of art “ HIVE” by local artist Meri De Caria featured in our logo. We liked the “Hive” so much that we decided to bake our RUSKS in it's shape.
